I am a graduate in German(Hons.) from prestigious Jawaharlal Nehru University(JNU). I am proficient enough to teach till B2 level of German since I am German enthusiast and have been giving home tuitions to school children since 2 years.
Currently, I am pursuing MA in linguistics from JNU.
I am a lingoholic and can speak 6 languages: Marathi(mother tongue), English, Hindi, German, Ahirani, and a little bit of Gujrati.

Ignoring exceptions, is there a phonological rule to choose when to use umlauts in German plurals?

There are some rules regarding the plurals of the word, but they are highly complicated and ambiguous. It will be challenging for a learner to form plurals if you go by those rules. The more natural way is to memorise the plural form of the word simultaneously as you come across a new word.
