As mentioned, you don't have experience and completed your education in MBA with finance and HR. Please don't consider any technology which doing and in demand, the first thing you have to look for is the pre-requisite and whether it relates to your subjects. The second thing how stable is the technology in the market, as per that plan, and make the strategy. If I have to suggest SAP Finance or SAP Sucess factor is the option.

It's been a long time you are asking questions for career guidance. I had answered earlier also, learning anything is not impossible. It depends on your interest area and goal. You need to choose wisely so that you can use existing experience if any and educational background to increase your chances to get a job. As I remember you have done SAP training also in the past have you done any planning to get a job in that field? Just hoping to learn different technologies will not help. Do proper planning and analysis with guidance and make a move.

SAP testing is one of the demanding profile in the industry, if you know the business flow of SAP Modules, for example, MM module which includes P to P cycle, S.D. module which provides for O to C cycle you can work for such profile.
